Balloons do not go to heaven. They land in the ocean and choke sea turtles, kill dolphins and whales, and the ribbons entangle birds. Many times, they end up on a beach as litter. Even the ones marked "biodegradable" can hurt animals before they have a chance to break down. Animals far from the ocean, such as horses, have been hurt and killed by balloons (they eat them when they land in their hay or they get spooked and bolt). Some balloons have started fires when they got entangled in power lines. Sky lanterns have set homes, power lines, trees, and buildings on fire. Sky lanterns can also entangle an animal even if it is marketed as "biodegradable." There are many safe alternatives to releasing litter into the air, such as planting a tree for your loved one or to celebrate your wedding (ask to plant a tree on the property where you are married) and watching it bloom, or blowing bubbles into the air. Grief is a painful process. In our grief, we do not need to cause others grief. When I was a teenager, I watched cooking shows on PBS. There was this one cook, Graham Kerr, who I took a liking to. He was known in my parent’s day as “The Galloping Gourmet” and when I was in my ‘20’s (when most of my followers were in diapers!), I got to learn some stuff from him at the CIA. Due to his wife’s quad bypass, he changed his cooking ways and did a lot of what we call spring boarding where you take an original recipe and make modifications to it. This is a recipe I remember after all these years! I’m going to try to fit it below. That ice cream recipe I promised. 🍨Marscapone ice cream swirled with house made jam of blackberry wine, red currants, and wild forest berries! 2 cups heavy cream 1 cup whole milk ¾ cup granulated sugar ¼ teaspoon kosher salt 5 large egg yolks ⅔ cup mascarpone cheese zest of 1 lemon Make a jam of blackberry wine, red currants and wild forest berries. Prepare an ice bath by placing some ice and water in a large bowl and setting another large container inside. Find your fine mesh strainer. Set both aside. Heat the cream, milk, sugar, and salt in a saucepan over medium heat until the sugar is dissolved. Meanwhile, place the egg yolks in a bowl; slowly whisk half of the warm cream mixture into the egg yolks. (This is called "tempering" the eggs. You want to slowly add the hot mixture to gradually raise the temperature of the egg yolks and not end up with sugary scrambled eggs.) Return the egg-cream mixture to the rest of the cream in the saucepan. Continue to cook, stirring constantly, until the custard has thickened enough so that it coats the back of a spoon and holds a line drawn with your finger, about 5 minutes. (The texture of the custard is called "nappant" when it reaches this stage.) Immediately pour through the fine mesh strainer into the contained set inside the prepared ice bath; add the mascarpone cheese (the warm custard should melt the cheese) and lemon zest to the cooked custard and let cool, stirring frequently, for at least 30 minutes. (Alternatively, if you don't want to stir the custard in the ice bath, you can place plastic wrap on the surface of the custard so a skin doesn't form and place it in the refrigerator for 2 to 4 hours.) Once the custard is cool, transfer the ice cream base to your ice cream machine and churn per the manufacturer's instructions. (You should stop once it's approximately the texture of soft serve. At this point of churning you can add house-made jam of blackberry wine, red currants, and wild forest berries.
