Happy Monday lovelies 💕☀️ Are you a fan of sweet potatoes loaded with sweet (rather than savoury) toppings? I was honestly never a huge fan. Savoury sweet potatoes were for sure my go to! But randomly I had a craving for sweet toppings this time - and am I ever glad I listened to my cravings 🤩 . This sweet thang is loaded with @daiyafoods black cherry yogurt, thawed frozen blueberries, @naturespathorganic coconut and chia granola, coconut shreds and pumpkin seeds 🍠🍒 would you go for it? . ☀️ Happy Monday! I'm starting my week with chocolate overnight oats topped with raspberry sauce and vanilla coconut yogurt. Delicious! To make the oats just combine 1/2 cup rolled oats, 1/2 coconut milk, 1 tablespoon cocoa powder, 1 tablespoon chia seeds, and maple syrup to taste (I used 2 tablespoons). Refrigerate overnight. He didn’t know how to fill his time after my Grammy, his wife of 64 years, went to a care facility for late-stage dementia. He started knitting hats.... he is a #cancersurvivor and the activity kept his hands, and more importantly his mind, busy. He’s made over 150 hats in about 9 months. He donates them to various hospitals and medical offices for patients who’ve lost their hair. My #Granddaddy.... he has a good heart. ❤️

Do you reach for a snack🍟🍰🍷🍦🍕🍺 instead of taking a walk when you’re stressed? Stress eating is a type of emotional eating, contributing excess and often empty (high fat/sugary) calories, which leads to eventual weight gain. If the body is experiencing a stress response, it will release cortisol causing an ⬆️ in cravings. If we cave to the stress eating we find ourselves on a perpetual rollercoaster of ⬆️ and ⬇️which makes us more stressed because we find ourselves out-of-control. 😧 A no-win situation that could lead to eventual adrenal fatigue! A technique that many of my clients pair with the 4 F’s (featured on our cravings post), is the acronym HALT. Tape this on your refrig, computer, or car dashboard and ask yourself these questions BEFORE you reach for food! H = hungry? If you are, eat healthy using the 4 F’s. If no, then move on to the next letter. A = angry, frustrated, disappointed? If yes, then talk to a friend, or write what you are feeling (what is the real root of it), then write out next steps to manage releasing the emotion. If no, then move on. L = lonely, bored? Yes...go do something…MOVE. Start a old/new hobby. 📞a friend, better yet, go take a 🚶🏽 with them. If no to L, then move to the last letter. T = tired? Rest. 💤 Do some type of self-care. Exercise to release some endorphins and dopamine to ⬆️ energy. More importantly, unrealistic expectations can lead to stress. Get rid of them. Be grateful, take one step at a time, link arms with someone and make the focus helping others. HALT!! Through running, yoga, and strength training, my body composition is changing. Today I fell into the average range for a man in my age range. Average. Of course, I still have more to do. Celle-ci est à base de carottes, de chou-fleur épicén de lait de coco, avec en garniture des amandes toastées et de la coriandre. 🌶 - Pour la préparer pour 4 à 6 personnes vous aurez besoin de: - 1 tête de chou-fleur (environ 750g) - 600g de carottes - 1 patate douce d'environ 250g - 1 oignon - 1 gousse d'ail - 1 morceau de gingembre de 30g - 1 piment frais - 1 cuillère à soupe d'huile de coco - 1 conserve de lait de coco (400 ml) - 750 ml d'eau - de la coriandre - 1 cuillère à café de curry, de curcuma, de cannelle, du sel et poivre - 1 orange - 50g d'amandes toastées - 1. Commencez par couper et émincer en dés la chou-fleur, la patate douce et l'ail, l'oignon, le gingembre, le piment et la coriandre. 2. Ajoutez une cuillère à soupe d'huile de coco dans une grande casserole, et ajoutez-y l'oignon, l'ail, le gingembre et le piment et laissez cuire pendant 2 min. Rajoutez les carottes, le chou-fleur, et les cubes de patate douce, et laissez cuire 5min supplémentaires. 3. Ajoutez la coriandre et les épices. Ajoutez l'eau à la casserole et laissez mijoter à feu moyen pendant 30min. 4. Pendant ce temps, pressez votre orange pour en récuperer le jus, et faites toaster les amandes sur une poêle chaude. 5. Après les 30min de cuisson, retirer la casserole du feu. Utilisez un mixeur plongeur pour mixer les ingrédients. Ajoutez le lait de coco et le jus d'orange. 6. Use your weekend to cook and prep to save time during the week! Whole oat groats in the IP for 32 minutes, unsoaked. Add water to more than cover the grains by 1/2 inch. You can always drain extra water. After cooked, I added berries, bananas, cinnamon, flax meal. I will add grains and nuts upon serving! The whole oat groat is even better for us than the processed steel cut or rolled oat flakes. Takes longer to digest, and keeps us feeling full longer. No problems with blood sugar spikes either. Chinese New year is around the corner... although a vegan, I am still baking wholesome cookies to celebrate cny.🤣 here green pea cookie recipe that is healthier for you!! Green pea cookies - 150g green pea flour ( not the pre-mix ones, it is basically just dry green pea ground into flour😂) - 180g oat flour( u can make it by blending oats until flour like texture) - 130g peanut butter - 1/2 tsp salt - 70g coconut sugar Combine all ingredients, except the peanut butter and mix well. Slowly add on the peanut butter and mix well, using hands. Mold it ( i used a 1 tbsp measuring spoon) and bake it in the oven at 150c for 20 mins. Even when in the midst of chaos...😌 . Made a healthy apple pie thick shake on Friday for breakfast, as I had less than 10 minutes to eat. I spent most of the little time I had feeding Nova her oatmeal, who then slept for two and a half hours!😅💕 ---------- APPLE PIE BREAKFAST SHAKE ---------- ○300ml Almond milk ○75ml clean water ○1 level scoop of VEGA vanilla essentials nutritional powder ○2 small apples, cores and chopped (freeze them the night before to make an even thicker shake.) ○1-3 TSP cinnamon (I like loads of cinnamon, I eat loads every day!) ○1/2-1 small to medium frozen chunks of banana. ☆ {Optional: try adding a spoonful of peanut, almond or cashew butter. I feel like I'm going to do this next time I make this recipe, as I reckon it would add another dimension to it.} ☆ ---------- Dump all ingredients into your blender jug (I invested in a @vitamixuk back in 2016, as they're super high powered. You can even make gram flour and nut butter with this baby. Worth every penny if you use a blender at least once a day!), adding the liquid last. Lid on, blast on medium, then full power until smooth. Hérna er mynd af gómsæta túrmerík & vanillu hafragrautnum sem ég útbjó mér í morgun. Ég toppaði grautinn með eplum, fræjum, kokosmjöli, valhnetum og hnetusmjöri! 👌⁣⁣ ✨⁣⁣ Í gær kláraði ég síðasta verkefni haustannarinnar og er því búin með mína fyrstu önn í tónlistarháskólanum hérna í Piteå. Það er svo magnað hvernig allt getur skyndilega breyst og hversdagsleikinn orðið allt annar en sá sem maður hafði vanist. Fyrir ári síðan hefði mér aldrei dottið í hug að lífið mitt yrði eins og það er i dag.⁣ ✨⁣⁣ Ég vildi óska að ég gæti sagt ykkur að ég minni mig á hvað ég er heppin í hvert sinn sem ég byrja að vera vanþakklát, en svo er raunin því miður ekki. Síðustu tvær vikur hef ég verið virkilega stressuð fyrir prófunum og verkefnunum, fundist allt ómögulegt og vorkennt sjálfri mér þvílíkt að þurfa að sitja og læra þegar mig langar að horfa á skemmtilegan þátt eða bara slaka á. Það er mikil vinna að breyta hugarfarinu og ég er stanslaust að læra hvernig ég tekst á við það. Það er svo magnað hvað maður venst aðstæðum fljótt og eitthvað sem var svo óraunverulegt og frábært verður skyndilega hversagslegt og svolítið eins og sjálfsagður hlutur.⁣⁣ ✨⁣⁣ Í dag er ég þó hamingjusöm og þakklát og á sama tíma guðslifandi fegin að geta loksins byrjað næstu önn. Beat Blue Monday with this rainbow pasta salad 🤤 Did you know that today is apparently the most depressing day of the year? 😲 Yesterday I did some meal prep and I don’t know about you, but knowing that I’m gonna have a yummy lunch defo helps me get out of bed in the morning 😂 #foodie 💁‍♀️ This super easy pasta is perfect to bring on the go and can be eaten hot or cold 👌 To make it, simply: . Boil some pasta in a pot with boiling water, go for whole wheat pasta for more fiber 🌾🌾 . In a separate pan, sauté all your veg (I used peppers, aubergine, courgette and mushrooms) along with some olive oil, garlic and salt - .
