So, CARROT LOX! Aka vegan smoked salmon This recipe is inspired by @olivesfordinner 😊 I have tried it a few many times and I think now I have perfected it, and I feel confident enough to share it 😄 Smoked salmon is the only animal product I actually missed - a little... now I can have a vegan version that I think is very close to the real thing ^^ You can eat it on toast, with spaghetti, as nigiri sushi... Swipe for pictures! I'm not the best photographer, but I guess the pictures are enough to give you a good idea 😊 and I promise: if you follow this recipe precisely, it will actually taste really similar to salmon. At least it tastes like the salmon-taste I remember 😂 --------++++-------- Here it goes: first you need: - three large carrots - coarse sea salt Wash the carrots, don't peel them, generously cover them in salt, bake them at 190°C for 90 minutes Then peel the carrots and cut them into thin jagged pieces (or neat ones, if you fancy) and marinate them for 24-48 hours in the following marinade: - 2 tbsp olive oil - 1 tsp flax seed oil - ½ tsp algae oil (could probably be omitted, but I used it, so it's included in the recipe, plus it's super healthy) - 1½ tsp rice vinegar - 1 tsp soy sauce - half a sheet of nori, cut into tiny pieces - a handful of brown algae, broken into small strips (rinse them with cold water first and then pour some boiling water over them and let them soak for 5-10 minutes. Use the water for the marinade, too!!!) - exactly four (4!) drops of liquid smoke (I know, many recipes call for like two teaspoons of liquid smoke, but trust me, this will only result in fishy bacon carrots... What You'll Need: 1 White Rabbit Nudie Base 100g seasonal tomatoes 1 small chargrilled pepper 3 tbsp spinach pesto* handful fresh basil to top . *For the Pesto: 1 cup baby leaf spinach 1 cup fresh basil 1/4 cup pine nuts 1/4 cup olive oil 1/2 squeeze lemon large pinch salt . Melt in small saucepan: ½ cup coconut oil 1 cup natural peanut butter, chunky . . Remove from heat and add in: ¼ cup honey, honey substitute or agave 2 tsp ⅛ tsp salt ½ cup dark chocolate . Once everything is combined, pour wet mixture into the oat mixture and toss well. Scoop with small cookie scooper into mini muffin papers. Place in fridge until hardened. Store in fridge in airtight container for up to a week. . Technically it's breakfast food, but I made this for dinner tonight 😉 It's high in protein and low in carbs 😊 Ingredients: - 180g tofu (a package or half a block) - 1 small red onion - handful of cherry tomatoes - 1/2 tsp of black salt (kala namak) - 2 tsp of nutritional yeast - 1 tsp of tumeric - salt and pepper Preparation: Heat up oil in the pan, add chopped onion, cook until translucent. Meantime drain tofu and crumble it into the pan. Fry for about 3-4 minutes. Next add cherry tomatoes and spices. Mix together, cook for more 5 minutes. Serve with greens and toasts and enjoy!😊 . . . 🇵🇱 Czas na tofucznię! Standardowo jem ją na śniadanie, ale czasami można coś zmienić, prawda? 😊 Składniki: - opakowanie (180g) tofu - mała czerwona cebula - garść pomidorków koktajlowych - 1/2 łyżeczki czarnej soli kala namak - 2 łyżeczki płatków drożdżowych nieaktywnych - 1 łyżeczka kurkumy - sól i pieprz Przygotowanie: Na patelni rozgrzej olej, dodaj posiekaną cebulę i smaż do zeszklenia. As I embarked on Veganuary, my main concern was missing eggs but fear not... there’s a solution! . . Scrambled Tofu! . . Seriously... hear me out 😂 I’ve been a vegetarian for 14 years and always shock people when I tell them I dislike tofu. It’s bland, spongy and just a bit funky. But after a few suggestions to try it scrambled instead of eggs, I put on my big girl pants and gave it a try. AMAZING! Even when Veganuary comes to an end this meal is still coming out to play! 😍 . . 200g tofu 2tsp cumin 1tsp turmeric 1/2tsp chilli Sprinkle chilli flakes Salt & pepper . Squeeze as much liquid out of the tofu as you can then add to a hot oiled pan. Add all the spices and begin to break up the tofu into a scramble. Keep it moving until it starts to get crispy. Remove from the heat and you’re ready to serve! Summer Quinoa Fruit Salad Ingredients . . 2 cups cooked red quinoa 1 cup diced strawberries 1 can mandarin oranges, drained 1 cup blueberries ¼ cup raw honey, honey substitute or agave 2 TBSP lime juice dash of cinnamon ½ tsp salt 1 cup pecans 2 TBSP maple syrup . . Instructions . Add in large serving bowl quinoa and fruit. In separate bowl mix together honey, lime juice, cinnamon and salt. Place pecans on small cookie sheet with silicone mat.Toss lightly with maple syrup and broil on low for 7-9 minutes, flipping the nuts half way through. Remove from oven and allow to cool (as they cool they will harden). Toss salad with honey mixture. Top with glazed pecans. Serve immediately. . Power bowls are one of my fave go to’s because you can add anything you want to it and it’s a quick nutritious meal to fuel your body! I like to pack mine with nutrient dense plant proteins like tofu(always make sure you eat ORGANIC soy products if consuming soy), pumpkin seeds, spinach, hummus, and hemp seeds! Meat isn’t the only way to get protein, y’all! Eating a plant based diet is not only helping my health, but has challenged my culinary creativity in a positive way! Polish below 🇵🇱 🇬🇧 I made this chocolate mousse today and it's so creamy, you have to try it! Ingredients: - 100 grams roughly chopped dark chocolate (I used 70% dark chocolate) - 1 package (340 grams) silken tofu at room temperature - 2 tbsp of maple or agave syrup Preparation: Melt the chocolate and set aside to cool at room temperature.
Meanwhile, place the silken tofu and maple syrup in a food processor and blend until very smooth. Add the melted chocolate and blend until well combined.
Scoop the mixture into 3 bowls or glasses, and refrigerate for 30 minutes. Serve with mint and fruits. Coconut Brownie Truffles Ingredients . ½ cup unsweetened coconut (pulsed in blender) ¼ cup agave or raw honey 2 TBSP coconut oil ½ cup natural almond butter 1 tsp coconut extract 1 cup oat flour 3 TBSP cocoa powder 1 scoop vanilla protein powder ¼ cup dark chocolate chips, roughly chopped . - Instructions . Mix together all ingredients except shredded coconut in stand mixer. Scoop out spoonful size scoops and roll into balls. Roll into coconut. Freeze until hard. Can keep in fridge for up to 2 weeks, freezer 1 month. . Taking part in Veganuary but craving your favourite take away? 😅 Don't worry, we have you covered with our Sweet and Sour recipe 👇 . . . 🥠 2 brown onions 🥠 1 yellow pepper 🥠 1 green pepper 🥠 4 tbsp tomato puree 🥠 600g firm tofu 🥠 80g kale 🥠 2 tbsp apple cider vinegar 🥠 2 tbsp maple syrup 🥠 2 spring onions 🥠 2 tbsp oil 🥠 2 tbsp tamari 🥠 1 red chill i🥠 8 tsp cornflour 🥠 160g brown rice . . . 🥠 Preheat the oven to 180C and boil the kettle. 🥠 Rinse your rice and place into a saucepan with 600ml boiling water and a pinch of sea salt. 🥠 Finely chop spring onions. 🥠 Allow to simmer for 20-25 mins until cooked, then drain. 🥠 Mix spring onions with rice. 🥠 Chop your peppers and onions to prefered size. 🥠 Roughly chop your kale. 🥠 Finely chop your chilli. 🥠 Rinse the tofu, pat dry. 🥠 Cut the tofu into prefered size chunks. 🥠 In a small bowl mix the tamari, tomato puree, maple syrup, apple cider vinegar and half of the chilli with 4 tbsp cold water. 🥠 In a separate bowl, add the cornflour and a pinch of sea salt. 🥠 Coat the tofu cubes with cornflour mixture. 🥠 Place the kale on a baking tray and mix with 1 tsp oil and a pinch of salt, spread out into an even layer. 🥠 Allow to cook for 10 mins until crispy. 🥠 Heat a large wok on a medium-high heat add 2 tbsp of oil. 🥠 Fry the tofu for 10 mins, turning occasionally until turning golden. 🥠 Add the onion and pepper, frying for 5 more mins until softening. 🥠 Add in the sauce to the pan and reduce the heat. 🥠 Cook for 1-2 mins, allowing the sauce to thicken. 🥠 Serve. . . . #healthyfood#healthylifestyle#healthyeating#vegan#veganfood#vegansofig#veganism#veganlife#veganfoodporn#veganrecipes#vegans#veganeats#veganfoodie#veganfoodlovers#veganfriendly#vegandiet#veganrecipe#vegancooking#veganuary#sweetandsour#januarychallenge#veganuary#veganuary2019#veganuaryeats#veganuarychallenge#veganuaryrecipes#AndrewJames#AndrewJamesWorldwide#AndrewJamesOnline

What you'll need: 1 White Rabbit Nudie Base 2 tbsp tomato pure mixed with 2 tsp water 3 vegan sausages 150g spinach (splashed in water) 1 Red chargrilled pepper, sliced 1 tbsp sriracha 1/2 tsp chilli flakes 1/2 tsp sage handful fresh basil . Toasted Coconut Trail Mix . Ingredients 1 cup toasted coconut flakes 1 cup raw, whole almonds 1 cup pistachios, shelled 1 cup cashews, unsalted 1 cup dried cherries ½ cup dark chocolate chips . Instructions Place coconut flakes in dry pan over medium/high heat. Toast flakes 2-3 minutes or until they turn light brown. Remove from heat and set aside to cool. Add hazelnut flour, cacao powder, vanilla extract and salt. Mix together. Next add blended oats. Shape the truffles and put hazelnut inside. Coat in chopped hazelnuts, then let them chill in the fridge for about 1 hour. Add crushed garlic, spices, potatoes and carrots, both chopped into small cubes. Fry for 5 minutes, add some water and part of chopped parsley and cook for another 10 minutes. Next add chickpeas and more water if needed. Simmer for about 25 minutes until veggies will be tender. Add the rest of parsley and serve. ½ uncooked quinoa
½ TBSP olive oil

Quinoa Sweet Potato Soup . Ingredients ½ uncooked quinoa ½ TBSP olive oil 4 garlic cloves, minced 2 cups diced onion 1 large sweet potato, diced 2 tsp cumin ½ tsp chili powder ½ tsp coriander 6 cups vegetable broth 1 can black beans, rinsed and drained sea salt and black pepper to taste toppings: blue corn chips, avocado, . Instructions Cook quinoa according to package directions. Set aside. Heat oil in large pot and cook onion and garlic for 5 minutes. Season with salt and pepper. Add in sweet potato and cook an additional 5 minutes Stir in cumin ,chili powder, coriander and broth. Bring to a boil and then simmer until veggies are tender (about 15 mins) Add in beans and quinoa right beggar serving. Serve and add toppings if desired. . Add oil, vanilla extract and non-dairy milk. Stir to combine.

LOADED TOAST IS BACK! 🙌🏻💛 . . I wasn’t sure when it would return but turns out today is the day! I forget how easy some of these meals are to make. It’s almost like I forget that if I’m making it there absolutely has to be a lazy component to it 😂 . . Loaded toast is the best as essentially it is bread, toasted, topped with anything you can find. Leftovers, veggies that are on their way to veggie heaven, strange mixes of condiments - my loaded toast meals have seen it all. . . This one here, I finally went back to scrambled tofu - cooking it with herbs, seasonings, liquid smoke, nooch and turmeric which turns it yellow. I usually add in mustard to make it creamy but this got topped with creamy sriracha mayo which made it creamy enough! . . Also in the mix; spinach, crispy sprouts, chilli and a few sad wilty basil leaves 😂 topped with green vie Parmesan vegan cheese, chilli oil and later sriracha mayo. Super easy and came together so fast! . . Happy Sunday! 💛

Lemon Chia Protein Bites . Ingredients ½ cup quick oats 1 TBSP chia seeds 3 cups Vanilla IdealRaw Organic Protein Powder 1 TBSP Truvia 1 tsp lemon zest 4 TBSP lemon juice 6 TBSP water . Instructions Combine oats, chia seeds, protein powder, Truvia and lemon zest in bowl. Add in lemon juice and water. Form into balls (note: all protein powders have different dryness levels, so you might need to adjust water measurement). Roll in unsweetened coconut shreds and place in freezer for 30 minutes.Remove from freezer and store in airtight container in fridge. Will last for 5 days. . Here's the recipe 😉 Ingredients: - 3/4 cup plant milk of your choice - 1 tbsp flaxseeds - 1 tbsp maple or agave syrup - 1/4 tsp vanilla extract (optional) - pinch of ground cinnamon - pinch of salt - bread of your choice, preferably a little stale - Coconut oil (optional) Preparation: Add all the ingredients to a blender (except the bread and the coconut oil) and blend until smooth. Pour the mixture into a shallow bowl and let stand for 5 minutes at room temperature. Place each slice of bread into the mixture, allowing the bread to soak in some of it on both sides. Heat some coconut oil in a griddle or a hot skillet, and place the bread slices onto the griddle/hot skillet until browned on one side, then flip and brown the other side (about 5 minutes for each side). Serve with your favorite toppings. I added some maple syrup and fruit salad. Enjoy! 😊 . . . 🇵🇱 Co u Was? Dziś jest sobota, więc miałam więcej czasu by przygotować śniadanie. Kale Sweet Potato Salad . Ingredients 2 sweet potatoes, diced 2 TBSP olive oil salt and freshly cracked pepper 1 cup (dry) Israeli couscous, cooked according to package directions (also called pearl) 3 cups finely chopped kale leaves ⅓ cup dried low sugar cranberries ⅓ cup toasted slivered almonds 2 ounces dairy-free cheese (if vegan) or feta cheese, crumbled (if vegetarian) . Dressing: 2 TBSP apple cider vinegar 2 TBSP olive oil 2 TBSP orange juice salt and pepper to taste . Instructions Heat oven to 425 degrees. Toss potato in olive oil and sprinkle with salt and pepper. Roast in on baking sheet for 20 minutes or until browned. Cool. Place kale, couscous, cranberries, almonds, cheese, dressing, and potato in bowl. Toss well. Serve chilled or warm. Will keep in fridge for up to 3 days. . Polish below 🇵🇱 🇬🇧It's Friday so it's time for pizza night 😉 Dough: - 1 1/4 tsp Active Dry Yeast - 2 tsp sugar - 1/2 cup Warm Water - 1 1/2 cup All Purpose Flour - 1/2 tsp Salt Toppings: - 2/3 cup of marinara sauce - 1/2 red, green and yellow pepper - 1 red onion - 100g of mushrooms - as much vegan cheese as you desire (I used about 100g) 🍴First, prepare the pizza dough. In a large bowl, combine the yeast, warm water and sugar. Stir gently, then let sit for 5-7 min. In separate bowl combine 1 cup of flour with 1/2 tsp of salt. Once the yeast is ready, add in the remaining 1/2 cup of flour to the bowl and stir. Then, add the flour and salt to the bowl and knead with your hands until the dough is soft, but not sticky. Add more flour if needed. Place the dough in a bowl, cover and let sit in a warmth for 45 min.  In the meantime chop all your veggies and grate your cheese. Preheat the oven to 220C/425F. Once your dough has risen, place it on a flour-dusted surface, and roll it into your desired shape. Place onto baking tray, then top with marinara, all the veggies and cheese. Bake for 15-18 min. Enjoy! 😊 🇵🇱🇵🇱🇵🇱 Dziś piątek czyli czas na pizzę! Ciasto: - 1 1/4 łyżeczki aktywnych suchych drożdży - 2 łyżeczki cukru - 1/2 szklanki cieplej wody - 1 1/2 szklanki mąki - 1/2 łyżeczki soli Górna warstwa: - 2/3 szklanki sosu pomidorowego - 1/2 czerwonej, żółtej i zielonej papryki - 1 czerwona cebula - 100g pieczarek - tyle wegańskiego sera ile zechcesz (ja użyłam ok 100g) 🍴Najpierw przygotuj ciasto. W dużej misce dokładnie wymieszaj drożdże, ciepła wodę i cukier. Odstaw na 5-7 min. W innej misce wymieszaj 1 szklankę mąki i sól. Kiedy droższe są gotowe dodaj pozostałe 1/2 szklanki mąki i wymieszaj. Następnie dodaj mąkę z solą i zagnieć dłońmi aż ciasto będzie miękkie, ale nie klejące. W razie potrzeby dodaj trochę mąki. Włóż do miski, przykryj i odstaw w ciepłe miejsce na ok. 45 min. W międzyczasie pokrój warzywa i zetrzyj ser. Rozgrzej piekarnik do 220C. Gdy ciasto wyrosło, rozłóż je na pokrytej mąką powierzchni i rozwałkuj na pożądany kształt. Przenieś na blachę. Rozsmaruj sos pomidorowy, rozłóż warzywa i posyp startym serem. Piecz przez ok. 15-18 min.

Ingredients: - 180g rolled oats or oat flour - 30g coconut oil - 90g peanut butter - 3 tbsp agave or maple syrup - peanuts on top Preparation: Preheat the oven to 180C/350F. If you're using oats blend them into flour. Melt coconut oil and add that to the flour. Add agave/maple syrup and peanut butter. Mix or blend it together. Add a splash of water if needed. Form cookies, put them on tray lined with baking sheet and pop into the oven for about 10-15 minutes. Enjoy! 😊 . . . 🇵🇱 No hej :) Dziś coś prostego, pysznego i szybkiego. No i dodatkowo, bez glutenu! I’m infamous for not using a recipe and then trying to pass along the recipe for what I cooked and leaving half the directions out. It’s not intentional! I swear I’m not trying to sabotage hungry people in the kitchen!! I just tend to cook like that. Sometimes it turns out, sometimes not 😬 Anyway, this recipe was requested. It was a tad tedious, with all the prepping of the eggplant. 1 flax egg or egg replacer
2 TBSP olive oil

Italian "Meatballs" . Ingredients 1 flax egg or egg replacer 2 TBSP olive oil 3 cloves of garlic ⅓ cup panko bread crumbs ⅓ cup sun dried tomatoes (in package, not jar) ⅓ cup fresh basil, minced ⅓ cup finely shredded dairy free (if vegan) or parmesan cheese (if vegetarian) 1 can chickpeas, rinsed and drained 1 pinch red pepper flakes salt and pepper to taste . . Instructions Turn oven on to 375. Heat large sauté pan over medium heat. Add 1 TBSP olive oil and garlic. Saute for 2 mins. Add to food processor. Set pan aside. Add to blender: bread crumbs, basil, tomatoes, cheese, red pepper flakes, salt and pepper and 1 TBSP olive oil. Pulse until well blended. Add chickpeas and pulse until a dough forms, don’t over blend! Scoop out about 1 TBSP of dough and form into balls. Coat in an equal mixture of some additional cheese and breadcrumbs. Reheat original pan used with some additional olive oil. Brown each ‘meatball’ for about 4-5 minutes, turning to cook evenly every few minutes. Place on cookie sheet in oven and cook an additional 15 minutes. Serve with a low sugar store bought (or homemade) marinara sauce and spaghetti squash for low carb pasta. . That’s my jam! Literally. 🤣 This time it’s blackberry despite its light color. Lol. This is literally so easy to make. I think I used a bit too much water, it’s a little funnier than I’d like. But it’s still absolutely delicious. For this I used two cups of blackberries, 2tbsp of chia seeds, 2-3 tbsp maple syrup (I like it sweet, use 1-2 if you want it a more natural sweetness), and then 3/4 cup water. Simmer in a pot! So next time I’ll use less water. Lol. But that the recipe for now. Phil: After a couple of days eating some processed food, it’s always good to soothe the gut with some fresh food. This main meal might seem simple and relatively tasteless but it’s far from flavourless thanks to roasting the veg and a brilliant dressing. Roast some broccoli, Charlotte potatoes and runner beans. Dry fry some tofu, and simmer some quinoa in vegan stock to place underneath, with some salad leaves. The dressing? Red wine vinegar, Dijon mustard and olive oil. Just the best.

1 lb brussel sprouts, trimmed
Roasted Brussel Sprout Winter Salad . Ingredients 1 lb brussel sprouts, trimmed 1 head romaine lettuce, cut and washed 2 cup baby kale ¼ cup blueberries 1 cup diced cucumbers ½ cup purple grapes, halved ¼ cup golden raisins or 50% less sugar cranberries ¼ cup dairy free cheese or feta (if vegetarian) ¼ cup red onion, diced ⅓ cup pepitas (can toast them for extra flavor) ¼ walnuts or pecans 3 TBSP maple syrup 1 TBSP olive oil . . Strawberry Vinaigrette Ingredients 2 TBSP apple cider vinegar 2 TBSP Olive oil (can use coconut or avocado) 2 TBSP maple syrup or honey (if vegetarian) ½ tsp sea salt ¼ tsp ground pepper ½ cup sliced strawberries . . Instructions Toss sprouts with olive oil and roast in oven at 425 for 20-25 mins. Tops should be golden brown and slightly crispy. Glaze walnuts or pecans with maple syrup. Toast in oven at 350 for 5-7 mins. Remove when done and allow to cool. Place lettuce and kale in a large serving bowl. Add in all the toppings, placing glazed nuts on top. Place all Strawberry Vinaigrette ingredients in blender and pulse until smooth. Add to salad just right before serving. . . Polish below 🇵🇱 🇬🇧 Hello again! Today I made this vegetable paella. It's easy, healthy and delicious so I highly recommend it! Enjoy the recipe 😊 Ingredients: - 250g green peas - 1 red onion - 4 cloves of garlic - 1 red chilli - 3 tsp smoked paprika - red pepper - yellow pepper - 3 tomatoes - 200g paella or basmati rice - 750ml vegetable stock - juice of a lemon - handful of parsley - salt and pepper Preparation: Chop and fry the onion in some oil until softened.
Thinly slice the garlic and chilli, and add to the pan with the onion over medium heat. Fry for 1-2 minutes.
Add in the spices and fry for a further 1-2 minutes, mixing everything together.
Meanwhile chop the peppers and tomatoes.
Add the vegetables to the pan along with the rice and stock.
Stir everything together to make sure it's all thoroughly mixed. Once boiling, reduce the heat to a simmer, add peas and leave to cook until the liquid is absorbed and the rice tender, stirring in between.
Squeeze over the juice of a lemon, chop and add in the parsley and season with salt and pepper. Stir together and serve! Enjoy 😊 . . 🇵🇱 Dziś zrobiłam warzywną paellę i gorąco ją polecam! Jest łatwa, zdrowa i przede wszystkim pyszna! 😊 Składniki: - 250g zielonego groszku - 1 czerwona cebula - 4 ząbki czosnku - 1 papryczka chilli - 3 łyżeczki wędzonej papryki - 1 czerwona papryka - 1 żółta papryka - 3 pomidory - 200g ryżu basmati lub ryżu do paelli - 750ml bulionu warzywnego - sok z 1 cytryny - garść pietruszki - sól i pieprz Przygotowanie: Posiekaj cebulę i podsmaż w garnku/głębokiej patelni do zeszklenia. Posiekaj czosnek i papryczkę chilli, dodaj do cebuli i smaż 1-2 minuty. Dodaj wędzoną paprykę i podsmażam przez kolejne 2 minuty ciągle mieszając. W międzyczasie pokrój w dużą kostkę pomidory i paprykę. Do patelni dodaj warzywa, bulion i ryż. Dokładnie wymieszaj. Po zagotowaniu, zmniejsz ogień, dodaj groszek i gotuj do czasu aż ryż wchłonie cały bulion i stanie się miękki.
Wyciśnij sok z cytryny, dodaj posiekaną pietruszkę oraz pieprz i sól, według uznania. Dokładnie wymieszaj i serwuj! Smacznego 😊

Home made oats. Breakfast idea for vegans. I started off by pouring some oats into a pot then I added almond milk and some cinnamon and stirred it all together. While it was heating up, I poured some frozen berries into a bowl and heated it in the microwave so it would become juicy. I poured the oats into another bowl, poured the berries on top, sprinkled some granola and put in some chopped bananas.
