Made this low carb chicken nugget recipe instead of using regular pork rinds, I used BBQ #porkrinds almond flour and egg wash. So good. I also love that my daughter can still enjoy her regular ones with bread crumbs, the funny thing is that you can’t even tell the difference in the two!!!. The best way I have found to make this diet work is to enjoy all the foods I love, with a low carb twist. Portobello mushroom 🍄 pizza cups 🍕 ⠀⠀ Such an easy recipe with only a few ingredients required 👉 swipe left for the steps (if it were up to me, it’s so delicious that I’d swipe right 😂) ⠀⠀ Anyway, what you need is: ⠀⠀ ▪️4 portobello (or large) mushrooms ▪️8 tablespoons of my home-made baked beans (recipe on my blog, or you can just use a 4-bean mix) ▪️4 Tb Passata (pasta sauce) ▪️4 slices of tomato ▪️4 slices of jalsberg cheese (or another cheese you prefer) ⠀⠀ 1️⃣Layer the ingredients in the mushroom “cups” as seen in the steps in a baking tray 2️⃣Pop under the grill for 15 minutes 3️⃣Sprinkle some oregano & pepper on top ⠀⠀ & enjoy! 😋 ⠀⠀ Thanks to @collegenutritionist for the inspo😍

By far one of my favorite recipes 🤤 This makes soo much food for the week so it’s perfect to share with your family! Save post for later use! . Quinoa fried “rice”: 2 c quinoa (make night before - I use my rice cooker) 1 lb ground turkey 3 eggs 2 c frozen mixed veggies 1/2 onion 1 package spinach 1 head of garlic 1/4 c soy sauce Drizzle sesame oil Ground ginger to taste . Cook ground turkey all the way through (sprinkle a little salt and ground ginger), add in garlic when it’s almost done cooking. Throw in mixed frozen veggies. Once veggies are no longer frozen, push ingredients to sides of wok and crack 3 eggs in the middle. Scramble eggs in the middle of the wok. Add in diced onions. Toss in package of spinach. Then mix in the quinoa. Pour soy sauce in, drizzle sesame oil, and add additional ground ginger to taste. Mix thoroughly. Serve hot and save the rest for later! Best topped with sriracha 🌶

Beef Burger on Low Carb Hamburger Bun The buns were really good this time around and a nice size for a full sized burger. Instead of making six smaller buns I made 2 large buns and 2 smaller ones for the kids. I flattened the buns out a little as well before placing in the oven. I added 1.5 TSP of everything mix and baked them for 1 hr 10mins instead of the recommended 50-60mins. I also cut and toast the buns before serving. I added 2 tbsp of Bacon grease, 1/2 tbsp steak spice and 1 tbsp of Worcestershire sauce to the patties before cooking. Had an itch for some #homecooking tonight so I browned a whole chicken in sage, rosemary and garlic oil and then roasted that pretty bird with root veggies, lemon and herbs. Served it up with a side of creamy #mashedcauliflower. Before you ask, #HubbsApproved. Hmm mm good! 🍗🍋🍽 . . . . . . #Recipe 🔅sauté sage, rosemary, garlic in coconut oil until garlic is brown. Discard. . . 🔅brown salt & peppered seasoned chicken on both sides. Set aside and reserve fat in pan . . 🔅sauté onions, Brussels sprouts, beets, potatoes, garlic, carrot and apple in chicken fat for a few minutes. Season generously w salt, pepper & lemon zest . . 🔅stuff browned chicken with jalapeño, lemon, garlic, sage, rosemary and onions . . 🔅nestle stuffed chicken on veggies, squeeze juice of one lemon over pan and roast for 45 mins in 400 degree oven. Alright so as promised here is the recipe for the Mexican lettuce wraps 👌 You can use this in normal tortillas if that is more your thing ... I’ve just recently cut out gluten from my diet so I used lettuce for the wrap ... the lettuce made it just so nice and refreshing 👌 Recipe: Ingredients: Black beans Garlic Onion Paprika Chilli powder Cumin powder Oregano powder Olive oil Salt and pepper Fresh Parsley Fresh Coriander Stock liquid (I cooked the beans in a veg stock with carrot celery onion garlic so I used the liquid left over but you can use any kind of liquid stock, youll need about 1-2 cups) Carrot Corn Spring onion Cherry tomatoes Basmati rice Avocado Lettuce Instructions: 1. Cook your black beans if using dried beans and set aside keeping liquid 2. Chop onion and garlic finely , and slice tomatoes ,grate carrot , chop kale and remove corn from cob 3. Add olive oil to pan and heat on medium , add tomatoes onion and garlic when oil heats up , cook this till the tomatoes start to break down then add the grated carrot and cook a little more , using the liquid stock as required if the mix starts to dry up 3. Add your spices , oregano powder and salt and pepper and more liquid 4. Now add the corn and chopped kale and cook till the kale starts to wilt 5. Add rice and mix it all together well, also add spring onion and fresh parsley and coriander and mix it all together adding more liquid stock again if required , allow to cook for a few mins then it’s ready 6. Serve with lettuce wraps or tortillas , your choice , you can top it with avocado and more tomatoes or whatever you like :)

Dinner! You guys, this turned out wonderfully!! Where do I begin? Stuffed chicken breast, to start. I pounded those things out FLAT as a pancake. I sautéed finely cut asparagus in olive oil and butter (S&P course). As it softened, I added chopped artichoke hearts and minced garlic. I set aside to cool. In a pan I rolled around some sweet cherry tomatoes in olive oils until they POPPED, then added cut celery for a little crunch, thyme for flavor, and S&P to taste. Earlier I had drained and rinsed both white beans (creamy!) and kidney beans (sturdy!). These were tossed with the tomato and celery mixture. Later I added cream cheese to the asparagus/artichoke conglomeration, spread it into the chicken, rolled those suckers up with twine, and seared them (the sizzle!). I finished them off in the oven and let them rest after. Dinner is complete!! I’m trying to step up my “amateur home cook” game. I will write up the recipe and blog about it t length later. One that doesn’t contain of cashews and nutironal yeast 😂 (aka a classic vegan Mac). But okay, I hear you. I will work on a decadent, CHEEZY & Maybe a little guilty 😏 Mac n cheese recipe. Will be throwing in the best vegan cheeses on the market... @chancy.james is an expert at vegan cheeses 🧀 WHO IS READY!? Meanwhile check out this Smokey very tasty Mac n cheese bake! 12 ounces macaroni noodles (I used brown rice noodles) Sauce: 1 cup raw cashews 1 (15 ounce) can cannellini beans 1 red bell pepper 1 tbsp miso paste 1/2 cup nutritional yeast 1 cup unsweetened plain almond milk Juice of 1 lemon 1 tsp liquid smoke (optional but highly recommend! gives a smokey “cheesy” flavor) 1/2 tsp salt 1/4 tsp pepper Homemade (GF) bread crumbs (Feel free to use store bought) 4 slices gluten free bread (I used follow your heart brioche loaf) 3 tbsp nutritional yeast 1 tsp garlic powder 1 tsp dried oregano 1/2 tsp salt Optional topping Fresh Chives INSTRUCTIONS: 1. Preheat oven to 375 degrees F. 2. Soak cashews in hot water for 15 minutes. 3. Cook noodles according to directions on the package. 4. Remove seeds from bell pepper and cut into 4 pieces, place on baking sheet lined with parchment paper and bake in preheated oven for 10 minutes. 5. Once bell pepper is out of the oven (leave oven on for the mac n cheese) place it in a high speed blender along with soaked cashews, cannellini beans, miso paste, nutritional yeast, macadamia milk, lemon juice, liquid smoke, salt & pepper. My 🌎 famous chilli. - 6 cups of black and kidney beans( i like to do 3 cups of each) - 1 large lean ground beef package - 3 cans of mushrooms - 1 large tomato paste can - 6 cherry tomatoes - half a small pack of baby carrots - 1 large white onion - 10 cloves of garlic - SEASON TO TASTE. I use fennel, cayenne, chilli powder, black pepper, salt, cinnamon, nutmeg, cumin and some fresh herbs ! parsley, green onion, and sweet basil. soak your beans over night, wash and rinse them off, then fill the container with fresh water to just over the beans. Place in pot on low heat, add beef and tomato paste. BRING TO ROLLING BOIL. after this you need to let it simmer for an hour while stirring. Add garlic and onion and mushrooms. Simmer for another hour. add in other veggies and your spices. let that simmer (cover the pot now) for 35 mins. LOW HEAT . serve 🤤

Ingredientes: -kale. -ejotes (previamente cortados y cocidos). -1 calabaza en cuadritos. - 2-3 varitas de apio. -1/2 taza de quinoa (previamente cocida). - sal, pimienta, jengibre, ajo y cebolla en polvo. - pedacitos de almendras. Procedimiento: Agrega el kale a un sartén con poquito aceite de aguacate hasta que empieces a notar que está haciéndose suave y sazona con sal y pimienta. En una olla pequeña agrega los ejotes, apio y calabazas con 2 o 3 cucharadas de agua y sazona con la cebolla, ajo y jengibre en polvo (1/2 cucharadita de cada uno) y deja que todo se cocine cuando el agua esté a punto de evaporarse agrega la quinoa hasta que ya no haya nada de agua. Who doesn't love hash? I mean come on?? So versatile. Me and my hunny have been loving roastin a bunch of potatoes and making so many different fun things. Here is my Turmeric Tofu Scramble. (Oh did I mention, I love leftovers and don't measure anything, so be prepared to guesstimate) hello, intuitive cooking: Ingredients: Literally however many potatoes you feel like making. I use red organic 1 Tsp dill 1 block of firm or extra firm tofu 3ish Tbsp olive oil Juice of half a lemon CHOPPED VEGGIES! Today I used brussel sprouts, green and white onion, a red bell pepper, and crimini mushrooms and 3 cloves of garlic Tofu sauce: 2 Tbsp nutritional yeast 1/2 tsp turmeric 1/2 tsp paprika 1/2 tsp garlic powder 1/4 tsp onion powder 1/4 black salt**** 1 tsp of spicy mustard 1/3 cup of unsweetened non-dairy milk. . ***Black salt is something I got on amazon. It is pink, and it smells like eggs, giving the tofu scramble an slight eggy taste. Definitely not necessary, but fun. Set oven to 425 degrees, and immediately put two cookie sheets in the preheating oven. Wash then chop potatoes into bite size pieces. Mix in a big bowl with a Tbsp-ish of olive oil, 1/2 tsp of salt, dill, juice of half a lemon, and freshly ground black pepper. Once oven is preheated, divide potatoes on the two sheets, spreading out evenly. Put in oven for 10 ish minutes, scrape pans and rotate them on different racks, put in for another 10 ish minutes. Taste a tater at the end, and who knows, they may be done or they may need 10 more minutes. I live in the mountains so cooking time is irrelevant here. While the potatoes are cooking, chop your veggies and saute them in a tbsp on olive oil, some salt and pepper, till they are less crunchy but not soggy. While that's going, mix together the tofu sauce in a lil bowl. In a separate saute pan, heat up the last tbsp of oil, mash up tofu in pan, leaving a few larger chunks. Once it's browned, add sauce. Add veggies to the pan. Mix it up. Once potatoes are done, take em out and put as many as you want into your tofu scramble. Save the rest for snacking or whatever you want.
