It’s been a while since I had pancakes, so I made some wholegrain spelt ones tod
It’s been a while since I had pancakes, so I made some wholegrain spelt ones today for breakfast. I used about 4 tbsp of wholegrain organic spelt flour, 2 tbsp wholegrain organic wheat flour, 1 tbsp ground chia seeds, 1 tbsp ground flax, about 1 tsp hemp oil & water to make them. I just add the water by sight, you are best off adding a little at a time and whisking until you get the right consistency. I have a pancake pan which is about 6 inches wide, I grease that with hemp oil, heat and then add about 1.5 ladles of the mixture to the pan for each pancake. I had enough mixture for 3 pancakes. It's been a while since I've posted the before & after. It took me a while to post photos of me on my feed 😅 I've been low key & invisible for almost 3 years on instagram (only posted a piece of me once in a while on ig stories to just letting people know that I'm still alive & breathing haha). Left picture was me in 2016 & I probably weighed 58kg. I don't have many photos of me for the past 4 years. Hence, there's not enough photos of the "before" to compare with. I would say the pressure of being a student & personal life are the main reason why I started to gain weight. I used to eat late at night during my degree years & sleep only 3-4 hours a day. I used to eat fast food as my go to meal because that's the cheapest, fastest & easiest way for me to eat & save money at the same time 😅 I don't really pay attention to my health. Sometimes I sleep to avoid dinner because being a student, I'm always in a tight budget. Though I paid attention to my studies to get good grades, I was not happy because I always feel tired due to my unhealthy lifestyle. I began my fitness journey last March 2018 with a goal to lose weight & be healthy. I'm so glad I did this. The only regret was why I didn't I start doing this sooner? 🤔 So, here's a progress photo of me. Be nice! Ben birçok kurabiye tarifimi yumurta muadili olmadan yapıyorum. Sıvı halde doğal tatlandırıcılar kullanırsanız(pekmez vb. gibi), malzemelerin bütünlüğünü sağlamak için başka bir içeriğe ihtiyaç duyulmuyor. Hem de rafine şeker almamış oluyorsunuz. Pekmez sevmeyen varsa hiç korkmasın, kurabiyeye ne aroma vermek isterseniz o aromada kayboluyor tadı. Mesela bu kakaoluydu(renginden de hiç belli olmuyor sanki😂) Diyeceğim o ki; denemekten, farklı tarifler oluşturmaktan korkmayın, her tarifte bambaşka bir şey keşfediyor insan. Bazen de başarısız olsun tariflerimiz, önemli değil... We added cinnamon, ginger and a few handfuls of blueberries for some extra fun. I made this for my mum who just eats a standard western diet and she thinks it's absolutely amazing, I promise you won't be disappointed with the result. ❣️Take 1 cup / 85g oats and mash with two - two and a half ripe bananas / 235g. Sweet 😋🧡 by @plantbased.recipes . Maple soy glazed mushrooms on sweet potato toast, avocado, tahini drizzle and hemp seeds by @cookingforpeanuts 🥑 . Recipe:⠀ . For the Mushrooms:⠀ Cut about 3/4lb crimini mushrooms into approximately 1/8 inch thick slices.⠀ . Mix together:⠀ 1.5 tbsp reduced-sodium tamari/soy sauce, about 2 tsp sriracha, 2 tsp maple syrup.⠀ Sauté in olive oil on high until starts to brown.⠀ Add sauce mixture above and sauté another minute until starts to stick to pan. . For the Sweet potato toasts:⠀ Cut sweet potato lengthways into about 1/4-1/2 inch thick slices.⠀ Brush both sides with olive oil and sprinkle sea salt.⠀ Bake on parchment-lined baking sheet at 400F until golden brown, flipping half way. Rather enjoyed this little Saturday morning treat. BLT on spelt and sunflower. Used some @uptonsnaturals bacon strips. For the money there are a fair few strips in the packet. They didn't fall apart when cooking and tasted fairly savoury. I think I'd buy them again so hope my local @sainsburys keeps stocking them and doesn't run out like they did with the pea protein mince I was looking to buy this week. Spread with @naturli butter and topped with @followyourheart mayo. Yum!

It was completely on grass (mud..) and even though I had never done this parkrun before, I had done a few cross country races there. I wasn’t thinking so I wore my usual track/road running shoes, instead of trail shoes or spikes. The course was VERY muddy and slightly hilly so as you can imagine I was slipping and sliding everywhere! I ended up getting 23:00 mins which is about 3 mins slower than usual. I was really down about this because even though the conditions, I thought I was a bit faster than this! (I’ve lost my watch so I had nothing to go by). I also looked on the results at my usual parkrun and saw that my rival who always beats me by a few seconds 🙃.(she’s probably very nice but we literally race each other every week 😂) got a pb by about 20 seconds. So anyway I got really down about this. BUT I just want to say that not every run is going to go your way! Some days I end up running super fast when not expecting to and some days I don’t! You shouldn’t put yourself down for one bad run or literally anything! It’s ok to make a few mistakes or not do your best. So yeah my rant is over!! 👌🏼👌🏼👌🏼 . . I’ve got southerns next weekend at my least favorite course ever 😂 (imagine basically 10 hills and it being very muddy....) 😅 should be good though 😂

Needed to fill a hole quickly so popped to Maccy’s for a veggie wrap. This was my second one & I still think they’re dead disappointing; the burger sans mayo was much better! But it served a purpose. Memes got the new veggie happy meal. I know some vegans hate maccy’s, but I personally feel that by buying vegan options from these places we will encourage more options. By refusing to buy from anywhere that sells meat we are decreasing demand for new vegan products. I know they’re a shitty company, really, but a vegan option anywhere is progess IMO. What are your thoughts on it? Also worth pointing out that fries are vegan in the UK 😊

Made a no bake cake for a house warming I’m going to tonight 😋 Its gluten free, palm oil free, organic and vegan (ofc)🌱 The bottom layer is made with: Rolled oats Dates Hazelnuts Sunflower seeds Coconut oil Coconut and peanut butter Salt Ginger syrup I put all the ingredients in the food processor, flattened it in the tin and put it in the freezer. While it was in the freezer I made the second layer. I added coconut oil, coconut whip, agave syrup and dark chocolate into a sauce pan and put it on medium heat for it to melt. While it was melting I chopped hazelnuts, then I roasted them in a pan with sea salt and agave syrup. I spread the second layer on top of the frozen bottom layer and sprinkled the roasted nuts on top, then back in the freezer. This is the kind of cake I never measure, I just add the ingredients until the texture is how I want it 💚👍🏽😁 You can make it in so many different versions, depending on what ingredients you have. Lazy Saturday brunch! 😋 I must confess I fell off the veganuary wagon last night! I asked my bf to cook coz I was getting home late from German class right from work. He made cheese tortellini (one of my favourite foods). I was kinda annoyed because I thought he was paying better attention. But opting for an easy life and not to waste good food I just ate it. I find it so easy to not eat animal products when I’m the one cooking but as soon as I get invited over for dinner or out for food I find it hard. I don’t want to be rude or hard to please. Eating out in Germany can be hard, if it’s not a veggie place there are very limited vegan and even veggie options! Anyone else have this issue? ~LOW CARB & GLUTEN FREE DINNER~ Today I made a KETO dinner: A LOW CALORIE KONJAC PASTA (9 kcal per 100 g! 23 calories of pasta for all my dish!) with homemade tomato sauce (with fresh basil and a little grated Mozzarella cheese inside), portobello mushrooms which I fried with a little butter and a little Parmigiano Reggiano on top (which I bought in Italy when I was there). For those of you who don't know these noodles: They are made from the asian plant Konjac (Shirataki) and it's made of 98% water!
