I鈥檓 talking salty, crunchy, and sometimes downright fatty foods. This dinner, actually took care of all three of those. - CRUNCHY/FATTY 馃嵈 Pan seared salmon is SO crispy and delicious. Plus salmon contains HEALTHY fats that can even help alleviate dry winter skin. I cook in garlic ghee for 5 min on each side in a nonstick skillet. - SALTY 馃嵈 spaghetti squash with 1 Tbsp pesto and two chopped sundried tomatoes. Slice squash in half and bake at 375 for 40 minutes face down, after spraying with nonstick cooking spray.

This salmon dinner came together last night in less than 20 minutes馃専thanks to a sheet pan set up & that good old microwave! 馃挭 - preheat oven to 400 F - line baking sheet with parchment paper - place salmon filets on parchment paper. Season with salt & pepper, smear a very light layer of mayonnaise (keeps it moist馃憣), then top with slices of lemon 馃崑 - add fresh or frozen & defrosted green beans to the other half of the baking sheet, spray with @chosenfoods avocado oil and season with salt, pepper, or whatever other seasoning you wish. - bake at 400 F for 15 minutes or until salmon is opaque and flakey. - while that is baking, prepare sweet potatoes: wash small sweet potatoes, pierce with a knife, and wrap in a damp paper towel. Microwave on high for 8-9 minutes until soft. . The healthy fats in salmon are so good for you, and great for my baby boys growth and brain development. But it sure can be expensive! Try buying salmon in bulk when on sale or from a warehouse grocer like @costco. Then when you get it home, immediately slice the fish into individual filets and freeze. Then you can pull a couple filets whenever it鈥檚 good for you. Be sure to defrost in the fridge for safety and use the fish within 2-3 days. 馃悷馃悷 #sheeatstolive

I had the stomach bug over the weekend so we need some easily digestible foods and this home made #glutenfree#pho is easily tolerated! . . . Instead of traditional noodles I used rice noodles to make a gluten free version. . . . To make: Boil 6 cups of water, add 2 1/2 cubes vegetable bouillon until dissolved. Boil 1/2 stalk of green onions for about a minute. Add in 1 8oz package of rice noodles. Boil until soft, about 5 minutes. Now pho is all about the toppings! For this version I added 1 TBS chopped basil and cilantro, 1/4 lime juice, 1 TBS more chopped chives and some bean sprouts. Serve immediately and enjoy! We are being blessed with unusually great weather for the time of year (The slight drop in temperature aside) We've had months of very mild weather 馃槈 The days are crisp and bright and with it being January, it is making getting out and about much easier, especially when trying to get your 10k per day steps in This week鈥檚 challenge is something along the same lines, as we are still trying to be active and get our steps in, BUT, this one is also going to let us get to know Donegal (or wherever you are from) a little better So, what I would like to know this week is this; Where in Donegal do you go to take a walk, go for a jog, a hike or just to clear your head for a bit and get away from the hustle and bustle of daily life? This is a great exercise to do as it鈥檒l help you get to know Donegal even better and also help us all to find some of the unique and special places that make our county so incredible! So often we end up going to the same places over and over again鈥. simply out of habit and because we know what to expect, or have a route that we know well So it鈥檚 time to switch that up 馃憤 Your challenge this week is to pick a new place you鈥檝e always wanted to visit 鈥 and actually GO there! There are LOADS of places around the county that you can go to keep active and enjoy the scenery while you are doing it 馃 Here are a few of my favourite places you may want to check out if you鈥檝e never been there before! (I鈥檓 always surprised when I mention a few of them to people who live locally and they never have been to some of these places Glenveagh Lisfannon Beach Muckish Mountain Sliabh Liag (Slieve League) Marble Hill Strand Beach These are some of my favourite places to go for a Sunday walk with the family and also to go for excursions with the Rushe Fitness members We have climbed Muckish and Mt Errigal several times over the past few years and they never fail to disappoint 馃挴 So, the question is where are YOU headed this week?!? On Monday I made a big pot of veggie chilli so most of my lunches have been based around this and actually so was my dinner last night (I just mix up the veggies accompanying it so I鈥檓 getting a variety). I threw together this 鈽濔煆糓exican chilli inspired bowl with amazing maple and chilli sweet potato wedges (using a @waitroseandpartners recipe), a little veggie chilli, spinach leaves, avocado and a dollop of yoghurt. 馃懇馃徑鈥嶐煃砊andoori chicken 馃槏 (SERVES 3-4) . 500g chicken 1-2 green chillies 3tsp garlic and ginger paste 1 1/2 tsp salt 1 tsp red chilli powder 1 tsp ground cumin powder 1 1/2 tsp garam masala 1 tsp vinegar 1-2tsp olive oil I ADDED a quater tsp RED FOOD COLOURING. This is optional, I was just experimenting...Will never do it again...it went everywhere馃槀 馃懇馃徑鈥嶐煃 Cook on extremely high heat in the oven (240degrees) for around 25mins or until cooked. . 125g serving - 5g Carbs, 10g fat, 45g protein, 286cals (P.s, you can use this marinade for everything...chicken, lamb, fish etc)
