Today is the day we had to hand back our little van! I will miss this little beauty and our little Christmas decoration. (Try spot it) . I was happily congratulating ourselves this morning on making it through the trip without any hickups, but little did I know in a few minutes our van’s key would snap in half and we would be left stranded for the next four hours. 😭 . luckily we were stranded next to 2 cafes, where I had a green smoothie and a smoothie bowl in one cafe (extreme I know) and a sticky chai and a peanut butter bliss ball in the other cafe while I waited for the locksmith to work his magic! There’s always a silver lining! 💫 . Now Alex and I are friends with Denis the locksmith, he even invited us on a camping trip with him and his wife to some natural hot springs! Love Denis. . Anyways, I recorded a bit of what we got up to, mostly swimming at insane beaches and eating delicious gut-friendly food. Grilled Shrimp Bowls + Cilantro-Lime Rice . Ingredients makes 2 servings Ingredients: 1 cup cooked brown rice 2 cloves fresh garlic, minced 1/4 cup fresh lime juice 2 Tbsp chopped fresh cilantro leaves 1 pound medium shrimp, peeled and deveined 1 medium avocado, sliced 1 cup cherry tomatoes, sliced 2 Tbsp avocado oil, olive oil sea salt and ground black pepper, to taste 1 large corn on the cob . Instructions: In a large bowl combine the shrimp with garlic, oil sea salt and pepper. Preheat grill to medium high heat. Add shrimp and cook, for about 2 minutes on each side. Meanwhile, brush avocado and corn with a tiny bit of oil. Add it to the grill and cook flipping once, until charred, only 1-2 minutes for the avocado and about 10 minutes for the corn; season with sea salt and pepper, to taste. Once cooked, and slightly cooled, cut the corn from the cob. Divide the cooked rice between 2 bowls. Add lime juice, salt, pepper and cilantro. Mix to combine. Set aside. Crumble: 1 1/2 c almond flour 1/4 c melted coconut oil 1 tsp ground cinnamon 1/4 c coconut sugar or maple syrup (optional) 1/2 c chopped pecans or walnuts (optional) Combine all together in a bowl with a fork, next add crumble to the top of your apple filling and sprinkle 1 tsp vanilla on top. Cover with foil and bake for 20 min. Then remove foil and bake for an additional 15-20min. Let cool and enjoy. I like to top ours with a big spoonful of Honey Cloud Meringue (I’ll post recipe in comments) This slightly sweet and deliciously healthy dessert is great for birthdays, holidays, socials, or even for breakfast! ♥️Jacqueline

Anyone else wake up craving chocolate?! 🙋‍♀️🙋‍♂️ ______ Make our Overnight Oats recipe base (two posts back) and just add 1 Tbsp of Cacao Powder per cup of oatmeal. Mix very well. Better yet; whisk the Cacao together with the nut milk and pure maple syrup before you add in the oats to make it easier to blend the powder. Either way works! 🔥😍Quick quinoa burger for your summer grilling!😍💪🏼 - By @feelgoodfoodie -⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS 1/4 cup uncooked quinoa 2/3 cup water 1 15 oz can black beans rinsed and drained 3 oz tomato paste 1 teaspoon paprika 1 teaspoon onion powder 1/2 teaspoon garlic powder 1/2 teaspoon oregano 1/2 teaspoon salt 1/2 teaspoon pepper 1/3 cup breadcrumbs 1 tablespoon olive oil Burger buns and toppings of choice - INSTRUCTIONS In a small pot, cook the quinoa with water and add salt to taste. Bring a boil, cover and simmer for 14 minutes. Uncover and fluff with a fork. In a large bowl, add the rinsed black beans and mash the bean fully with a fork or potato masher. Add the cooked quinoa to the black beans, then add the tomato paste, all the seasoning and the breadcrumbs. Form four patties. Heat olive oil in a grill pan, place the quinoa burgers in the pan and fry over medium heat for about 4 minutes per side. Add all latté ingredients to a blender and process until smooth. Add to a small pan and heat gently. While the pumpkin latté is simmering, add aquafaba to a clean mixing bowl and whisk for at least 5-6 minutes until it starts to form stiff peaks. Add in cream of tartar, vanilla extract and 2 tsp rice malt syrup slowly while whisking. Keep beating for a further five minutes, the mix should be thick and stiff. Scoop into a piping bag and swirl on top of your hot latté. The cold gets me craving hot soup, and this #vegan curried butternut squash and caramelized onion soup definitely did the job. 🍂🍁🧡 . Here is how I made it (makes about 4-6 servings: Drizzle of avocado oil (or any other cooking oil) 1/2 large white onion or 1 small white onion, sliced 1 butternut squash, diced 1.5 Tbsp curry powder 1/4 tsp cayenne pepper (optional) 1/2 tsp ground black pepper 1 bay leaf Salt, to taste Water and/or veggie broth, as needed (you can use any combination of the two, or even chicken stock; I used water because I didn't have any broth) Yogurt or coconut cream, to garnish Finely chopped fresh parsely, to garnish Heat the oil in a large stock pot. Add the sliced onion and cook over medium-high heat, tossing frequently, until the onions are caramelized. Add the squash, curry, black pepper, and optional cayenne pepper (if you like spicy food) and stir to combine. Add just enough water or veggie broth to cover the mixture, add the bay leaf, and simmer for 20-30 minutes, or until the squash is tender. Remove and discard the bay leaf. Using a hand-held blender (or transfer into a large blender), blend the soup until smooth. Add salt to taste and add water as needed to adjust consistency. Ladle into serving bowls, drizzle with yogurt or coconut cream, and sprinkle with fresh chopped parsely. Enjoy! What is your favorite way to prepare butternut squash? Creamy tomato soup @klaraslife 💚 . 1 onion, chopped 1 garlic clove, chopped 1 large carrot, diced ½ chili 2 cans of tomatoes à 400 ml 1 tablespoon tomato paste 500 ml vegetable stock + more 1 Bay leaf ¼ teaspoon smoked paprika powder Salt pepper Basil oil: 1 handful of basil, salt 80 ml of olive oil 150 g of chickpeas ect. Almond flakes, roasted Soy cream, half whipped Instructions Fry the onion and garlic in olive oil. Add the carrots and chilli and fry for 5 minutes. Add the tomato paste and fry for 5 minutes, stirring constantly. Stir in tomatoes, vegetable stock, bay leaf and paprika and simmer for 30 minutes. Mix basil with salt and oil. Mix the chickpeas with a little oil, salt and smoked paprika and bake for 15-20 minutes at 180 ° C/350F Remove the bay leaf and finely puree the soup in the mixer or with the hand blender. Session and add some broth if necessary. Arrange in small bowls and decorate with basil oil, roasted chickpeas, almonds and soy cream. 😋😋
