I found these falafel in IGA the other day and they were some of the best I'd ever tasted - but I haven't been able to find them since 😰 fingers crossed they'll pop up again. I was having a serious falafel craving after searching for them so went for some plain ones instead. Jazzed them up with some greens, vegan tzatziki, Kalamata olives (because there ain't no olive like a Kalamata olives!) and some sauerkraut for gut health ☺️ Now that's balanced meal 🥰

One thing that I learned in my fitness journey is get the word ‘diet’ out of your dictionary because eventually you’ll lose to your cravings. You want to make it a lifestyle, eating boiled chicken and rice or low carb/low fat diet is not going to help it. Eat healthy and what you like (it doesn’t mean that you should be hanging out at McDonalds everyday) but make sure to be in a caloric deficit state. Keto and other fads work because they put you in a caloric deficit state which you can also do by controlling your portions and not sacrificing on some nice carbs that fuels your body.

These little bars are full of energy & super yummy! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Seeded Brunch Bars⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients⠀⠀⠀⠀⠀⠀⠀⠀⠀ 150g Sunflower seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀ 160g Rice Syrup⠀⠀⠀⠀⠀⠀⠀⠀⠀ 150g Oats⠀⠀⠀⠀⠀⠀⠀⠀⠀ 125g Pumpkin seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀ 50g Linseed⠀⠀⠀⠀⠀⠀⠀⠀⠀ 30g Chia seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀ 100g Dried cherries⠀⠀⠀⠀⠀⠀⠀⠀⠀ 150g Medjol dates⠀⠀⠀⠀⠀⠀⠀⠀⠀ 150g Dried figs⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Makes: 12⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preparation time: 20 minutes⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cooking time: 40 minutes⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Method⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat oven to 180C & lightly grease a 26cm x 20cm baking tin or similar then line with baking paper.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Place sunflower seeds on a baking tray & toast in the oven for 15 minutes until lightly golden stirring every 5 minutes.⠀⠀⠀⠀⠀⠀⠀⠀⠀ While the sunflower seeds are toasting place oats, pumpkin seeds, linseeds, Chia seeds, dried cherries, Medjol dates & dried figs into a food processor. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Pulse together for 20 seconds. It only needs to be slightly chopped then transfer to a bowl. When the sunflower seeds are toasted place in the food processor & blend. It will become a crumb after 1 minute then gradually the oils will be blended out & it will become a smooth paste. This will take about 5 minutes.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Add rice syrup followed by all the chopped seeds & fruit. All free apart from mushrooms which are speed 😁 - Heading off to Bristol today for an interview tomorrow BUT I absolutely refuse to have a repeat of last week in Edinburgh where I went totally off plan for two days... So I’ve packed loads of fruit, got some yoghurt to have it with and made a rice and chicken salad for when I inevitably get hungry on the way there! And instead, practice mindful eating which is being aware of the taste, texture, aroma, and presentation of food, as well as your body’s hunger and fullness cues. 👌🏽 . My top tips for mindful eating are: 1️⃣Eat with balance - It’s a good idea to include fibre, fat and protein in each meal, which not only provides balanced nutrition but can also help with meal satisfaction, keeping you fuller for longer. 🥑🍗 2️⃣Meal timing - It helps to eat food in regular intervals, say every 4 hours or so, paying close attention to portion size. Keep in mind if you’re not hungry after these 4 hours, it’s important to wait until you are to have your next meal. ⏰ 3️⃣Be present - this means eating with intention and try not to be distracted by outside influences such as the tv. Try focus solely on your meal or snack while eating. 👀 4️⃣Know when you’re hungry or full - instead of eating on autopilot and cleaning your plate out of habit, challenge yourself to put the knife and fork down when you are actually satisfied. Also it’s important to not let your body get overly hungry and eat when you feel a gentle hunger. 🍽 . The most important and first step is to love your body just the way it is, this will allow yourself to trust your body enough to be a mindful eater.
