Welcome to Monday. Where did the weekend go? This weekend was a bit of an emotional roller coaster for me, filled with more plunges than rising. But, we got through it, and we’ll bring in the new week with a small jar of chia seeds mixed with 1/4 cup @silk unsweetened cashew milk + 1 Tbsp cashew cream by @chocolatecoveredkatie + 1 tsp xylitol + some stevia/salt/vanilla extract + 1 scoop @vitalproteins collagen peptides, topped off with sliced banana and my own homemade granola. The granola... eh, it’s still in the works. Trying to create my own recipe with plenty of nutrition and taste, but not sweetened with syrup (spikes my blood sugar SO high and ramps to cravings higher!). But, like a rough weekend, will a poor granola recipe stop me? No! And neither should it anyone! So let’s take this Monday like it didn’t see us coming!!! :-D 9 days until Christmas!!!

I love making chia seed pudding at night so it’s ready to eat in the morning✨My favorite is my raspberry chia seed pudding because it combines my love of chocolate and raspberries🍫😍 . Food Facts: For One Serving 1. Mix 2 tablespoons of chia seeds, 1/2 tablespoon of maple syrup, 1/2 teaspoon of vanilla extract, and 1/2 cup of your milk of choice (I use unsweetened vanilla almond milk) in a bowl. 2. Place the bowl in the fridge and let sit for at least 4 hours, or overnight. The chia seeds should have expanded and created a pudding like consistency. 3. When you’re ready to eat, split the chia seed mixture between two bowls, and add 1/4 tablespoon of cocoa powder to one of the mixtures. 4. Place the chocolate chia seed pudding at the bottom of the glass. Mash up 1/2 cup of raspberries and layer them on top of the chocolate mixture. 🎄 This has been a regular around here lately!! Warm (or sometimes cold 😉) Chia pudding! I take a can of organic coconut milk and mix it in a blender with 4 cups of water, some cinnamon, vanilla bean and a little salt. I then divide it into 4 Mason jars. I put a scoop of @furtherfood collagen peptides and 2-3 Tbsps of chia seeds in each jar. Put lids on each, shake and let sit overnight! I shake the jar a few times in the first couple hrs to keep everything mixed evenly! In the morning I will either eat it cold or heat it on the stove! This morning I topped it with berries, @higher.power.raw.foods buckwheat granola and heated 🍐 & 🍏 blend! I unfortunately found out this fall that I have oral allergy syndrome 😔 that can happen with raw apples, so I have to heat them to be able to eat them! - Кофейный десертик🍧 ⠀ -120 гр. мягкого творога(у меня Простоквашино 3,8%) -100 гр. ряженки(4%,с ней вкус будет сливочным👌😋) -50 мл молока(3,2%) -1 ч.л кофе -5 гр. семян чиа(1 ч.л/можно заменить на семена льна) -12 гр. обычного желатина -сахарозаменитель по вкусу ⠀ ⠀ ▪️Желатин залить водой(примерно 50 мл) и оставить набухать на 20-25 минут.Творог,ряженку и сахзам смешать.Молоко подогреть и добавить в него кофе,перемешать и аккуратной струйкой влить в нашу творожную массу. QUICK PLANT BASED BREAKFAST 👇 . Along with my usual overnight oats, chia seed pudding is another quick and filling breakfast option. . . I'm all about convenience when it comes to cooking and making a plant based diet work for my lifestyle. So I'm a batch cooking queen and love to repurpose meals. . . In this case, just like overnight oats, I would make two or three chia seed puddings at a time and have them ready to go in my fridge whenever I need a quick snack or have no time to cook breakfast. . . This one here is one I had at the Yoga Barn in Bali, but the same concept still applies. Grab a Mason jar (or any glass container) and put together the following: . . 👉1/4 cup chia seeds 👉1 cup plant based milk 👉1 tsp vanilla extract 👉1 tsp ground cinnamon 👉1 tbsp maple syrup (optional) 👉Additional toppings: fruit, nuts, seeds . . Stick it in the fridge overnight and enjoy!! They should last about 5 days in the fridge so you can always be stocked! . . My favorite combo for additional toppings is mango & banana with coconut milk. Of course, it's all about discovering which one makes this recipe the most delicious based on YOUR taste. . .
