When I was at my sickest with #mecfs and bedridden for many years my mum would sometimes drive me to the beach on the weekends. The beach was a 2 minute walk from our house. Walking from the car park and down the short path to the beach was agonising. I felt like my body wasn't going to hold up. I cannot even describe the extreme weakness, fatigue and pain that I experienced. 😢 . This photo represents FREEDOM for me. It reminds me of how far I have come over the past 10 years. But particularly how far I have come in the past 2.5 years. 🌈 . I don't follow the @medicalmedium protocol strictly and eat a well supplemented high raw vegan, low fat (with periods of zero dietary fat) diet because I THINK it is the right approach. It is SO much more than that. It has been the only approach I have tried in the past 10 years that has very quickly relieved chronic symptoms such as chronic pain, lymphatic stagnation, and increases my energy and quality of life. It has been the only approach that has actually allowed my body to heal. 🍌🍇🍉🍊🌿 . I was conditioned to believe that a #paleo diet was the only way I could heal from disease. That I needed to fuel primarily off fat because it is a 'cleaner' fuel source for the body. But in all honesty, I didn't see any improvements during the 7 years that I ate in such a way. Those beliefs still creep back in though at times, and I question if I am doing the right thing. I have to remind myself to get out of my HEAD, move into my HEART & LISTEN to my body. 💫 . Sometimes it takes time to let go of old beliefs that were held onto for so long. But the results speak for themselves and our bodies do not lie! I am forever grateful for the work of @medicalmedium. 🙌 If you haven't already I urge you to read his books or listen to his podcasts. Educate yourself. Empower yourself. Heal yourself. 🙏

Pumpkin Spice and Everything Nice in mini Cheesecake form😋🎃Can you tell my favorite dessert is cheesecake? Here's the recipe: For the base: I combined about 2/3 cup pecans, 1/2 cup oats, 1/2 cup soaked dates and salt. Pulse until fine sticky crumb mixture is achieved and press evenly into 12 lined muffin tins OR a 7 inch spring form cake pan. For the filling: 1/2 c. coconut oil 1 can full-fat coconut milk (Make sure to place the can in the fridge the day before so cream seperates. Use mostly the thick cream and just a little of the water) 1 c. soaked cashews (soak overnight or just boil for 15 minutes) 1 can chickpeas 2 lg tbsp coconut sugar 1/3 cup lemon juice 1/3 cup maple syrup 1 tsp vanilla sea salt 2 tsp pumpkin spice 1/2 to 2/3 cup pumpkin puree Optional additional 1 tbsp coconut sugar and salt. Combine all ingredients coconut oil to salt in a blender blend until smooth. Seperate approx 1/3 of the mixture into a separate bowl. Combine pumpkin and pumpkin spice with the remaining 2/3 of mixture. I aso added 1 additional tbsp coconut sugar and some salt to this mixture. Pour pumpkin layer over crust in muffin tins until 3/4 full. Dollop plain white mixture over top. Use a butter knife to make swirls. Add a pecan for garnish if desired. Also awesome with coconut whip and a sprinkle of cinnamon. Set in freezer. Thaw minimum 1 hour before serving. Most oils contain a mix of these and every oil has a different composition. Olive oil f.e. consists mostly of monounsaturated fat, but contains a small amount of saturated fat as well! 👉🏼 SF = saturated fat, MUFA = monounsaturated fat and PUFA = poly unsaturated fat. ___ Some fats are better for your health than others. Saturated are considered to be less healthy because they can raise our bad cholesterol levels and increase our risk of heart disease. As we can see on the image coconut oil is high in saturated fat compared to olive oil. This is why we need to limit the use of this oil, not specifically restricting completely. Besides that, did you know that there are a lot of different kinds of saturated fats as well? Coconut oil f.e. consists mostly of lauric acid which is a saturated fat known to increase both good and bad cholesterol levels. ___ Firstly do not avoid eating fats in general because our bodies ‘em to function. Secondly when it comes to saturated fat, respect the maximum of 10 percent of total calories (including the saturated fats from coconut oil, it doesn’t matter if it’s plantbased or not). Let me be clear, both can have their place in a healthy lifestyle! Completely #vegan#recipe for cauliflower pizza. I have to admit, this definitely is not ‘pizza’ but I think it was very flavor and a yummy dinner. . . . Recipe: 1.5-2 cups riced cauliflower cooked at 350 degrees for about 15 minutes. I soaked 3 tablespoons of ground flaxseeds in 3 tablespoons of water while the cauliflower was cooking. Then I combined everything (once it was cooled down) with 1/2 cup hazelnut flour, with salt, Italian seasoning, and garlic powder. I put it in the oven at 375 degrees for 30 minutes, flipped it over and put it in the oven for another 15 minutes. . . . For the final product I made a tomato marinara (put 1.5 cups of tomatoes, with 1 garlic clove, pinch of Italian seasoning, and dried garlic in the blender. On a low heat, I cooked it for 2-3 hours until it reduced.) I put the marinara on the cauliflower crust. Then I added the Alfredo sauce (recipe is from my past post). Topped with mushrooms, fresh garlic, half of the pizza had spicy peppers and olives which my daughter doesn’t eat. . . . My husband loved it, my daughter at a slice and then was over it. It’s probably 50 meters from my door step, and it is really similar to what I will be running for my 100-miler, so it gives me a good idea of the real thing...minus all the adrenaline. I can’t wait! 45 days until I become a 100-miler!

Add 1 T chili powder, 1 T cumin, 2 teaspoons oregano, 1 T tomato paste, 1 teaspoon garlic powder, 1/2 teaspoon smoked paprika, the cook for a few minutes. Add 2 sweet potatoes diced, 1 28 oz can diced tomatoes, and just enough vegetable broth to cover. Bring to boil then cook on low simmer covered for about 15 minutes. Add 1 can of beans and 1 cup frozen corn, and add additional broth if needed over the course of next 45 min. Add 1 teaspoon kosher salt and taste for seasoning. Top with green onion and fresh cilantro. 👍 . . For quinoa salad, mix about 2 cups cooked quinoa with 1/2 cups cooked corn. Make dressing by whisking juice of 1 lemon, dash of white wine vinegar, and a couple tablespoons olive oil. Add salt and pepper to taste. Toss dressing with quinoa and corn. Veggie Filled Rice Paper Rolls with Peanut Butter Dipping Sauce! 😛 . My first try at making rice paper rolls went deliciously! 😋 These are filled with cucumber, tomato, carrots, spinach, avocado, romaine, and basmati rice! You could get really creative with these, fill them with whatever you like! . •I started by cooking 1 cup of rice according to the package. . •While that cooked I cut the veggies into thin matchstick sized pieces. . •I also made a quick dipping sauce using vegan hoisin sauce, tamari (or regular soy sauce), a dollop of peanut butter, and some water to thin it out. •After the rice was done, I fluffed it with a fork and let it cool for a bit •Next I filled a bowl with warm water to dip the rice paper into. You only need to wet it for about 15 seconds, then shake of the excess water. . •To assemble I placed the softened rice paper on a flat surface and added the rice and veggies to the middle of it. I used small amounts, didn’t wanna over stuff it. Then I folded one side of the paper over the filling, tucked in the sides, and rolled over to seal it all up! . . These were SO GOOD! Can’t wait to make them again! Who else loves cheesecake? 💁🏻‍♀️ It used to be my weakness, anything cheesy or creamy. Years ago when I realized I have a dairy allergy I thought I’d have to deprive myself, but fortunately I’ve learned there’s other options that are just as satisfying, without the congestion I had with the dairy. In fact, I have no desire to go back and taste it otherwise. . I found this coconut/cashew/ cacao cream cheesecake (and another Lemon and Turmeric one) made by a vegan chef at the market in Rotorua and it is divine!! 😋😋 I’m wishing I had some right now but going to try making something similar when I get back home. . In the meantime, I’m enjoying my last day with Erana in Auckland before I fly back home tomorrow. 😊

I don’t know why it’s been so long since I’ve made overnight oats 🤔 but I think I made up for it with these chocolate overnight oats topped with chocolate peanut butter, hemp seeds and sliced almonds 🥜 🍫 • Mix the following ingredients together and soak overnight 1/2 C rolled oats 3/4 C almond milk 1 tbsp cacao powder 1 tbsp soy isolate (optional) 1 tbsp flaxmeal (optional) 1/2 tbsp agave nectar (any sweeter you’d like) • The peanut butter was just a mixture of 1 1/2 tbsp peanut butter, 2 tsp cacao powder and 1 tbsp almond milk heated on low until smooth and thickened (because store bought is over priced 🤑)
