Here's the first recipe I have made using butternut sqaush! I made this mid last week and I almost forgot to post the recipe! 😅❤ . Butternut Squash Chicken Skillet: *Serves 4-6* . Ingredients: • 1 lb boneless, skinless chicken breasts • 1 Butternut squash, cut into bite sized pieces • 1 tbsp minced garlic • 1 cup onion, sliced • 3/4 cup chicken broth • 1 tsp garlic powder • 1 tsp oregano • 1 1/2 tsp cinnamon • 1 1/2 tsp nutmeg • sea salt and ground pepper to taste • 2 tbsp olive oil • 1/4 cup apple cidar . . How: 1. Preheat oven to 375. 2. Put chicken in a bowl. Add 1 tbsp olive oil, garlic powder, oregano, salt and pepper and mix together, so that the chicken is seasoned well. 3. Bake chicken in the oven for 20 minutes, flipping half way through. 4. Mix everything else together in a large bowl besides the last tbsp of olive oil. 5. Heat olive oil in a large skillet. 6. Once the chicken is baked, cut up into pieces and mix in with the butternut squash bowl. 7. Add everything to the skillet and cook for about 40 minutes or until the squash is soft. 8. Add more chicken broth if the meal is getting too dry. 9. INDIAN EGGS for a family breakfast with sautéed onions, a mix of peppers and spinach with mustard seeds, cumin, turmeric and coriander, all served with the leftover aubergine raita and some walnut bread to dip in the yolks. *** I’m always thinking of new ways to include vegetables in breakfast so I’m not having the same frittata every day! This was just super easy and filling and tasty. *** INGREDIENTS (serves 4) 1 tbsp olive oil 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1 red onion, sliced 1 clove of garlic, crushed 1/2 tsp turmeric 2 peppers, a mixture of colours 1 chilli, finely chopped (optional) 80g spinach 8 eggs 10g coriander, roughly chopped *** RECIPE 1. Heat the oil in a non stick pan and when hot, add the cumin and mustard seeds. 2. When the seeds have tempered, add the red onion and sauté until softened and starting to caramelise. 3. Add the peppers, turmeric and garlic and sauté for a further 2 min. If using the chilli, add now. 4. Add the spinach and sauté until wilted. 5. Make 8 holes in the vegetable mixture to crack the eggs into. 6. Allow to cook for 3 to 4 minutes until the bottoms are starting to set. 7. Put the whole pan under a hot grill for another 3 minutes to ensure that the egg whites have set, but the yolks are still soft. 8. Luego sumergen el pan que escojan en la mezcla (yo hice el pan de avena y zucchini), lo dejan unos minuticos para que absorba y en un sartén muy caliente, y con un poquito de aceite de coco en spray, ponen a dorar 💛🧡 Normalmente queda un poquito de la mezcla, por que el pan no logra absorber todo, yo lo que hago es que cuando pongo las tostadas en el sartén, vierto lo que sobra de la mezcla encima de ellas, dejo que se cocine un poco y doblo, como cubriendo las tostadas. Eat fatty foods you gain more fat than muscle, eat leaner meals your body fat will reduce - simples !! That doesn’t have to be boring though... I find it easier to re invent meals I love. Like my favourite breakfast - Almond milk cappuccino with scrambled eggs, smoked salmon and avo!! Nom nom 🤤 SWIPE ↔️ but that’s 37g of Fat without the coffee, which is over half my daily intake considering my height!! SWIPE ↔️ completely removing these kind of meals would make me go insane so I reinvent!! Just playing around with something different last night and it turned out pretty good 👍 Lentils with shredded turkey leg, bell pepper, tomato and onion. Besides being pretty tasty 😋, it was also really simple to make. - - - Cook lentils on medium heat (simmer) about 20-30 minutes (until desired firmness) while turkey roasts in the oven. Once lentils are done, cook bell peppers and onions until ready to toss in. Pull turkey out of the oven and shred into strips. Stir the turkey, bell peppers and onions, and tomatoes into the lentils. Boom 💥! You’ve got a complete meal that’s high in protein, SUPER high in nutrients, and easy on the waistline 👌 The best part? @karamiklaus 🤰 said it was 🤤

Warm up your Wednesday with a meal from my November recipe pack! _ Spinach, bacon and mushroom quiche (Low carb and meal prep friendly). _ What you will need : 175g flour 100g butter 1 egg 6 sliced of smoked bacon 1 leak, chopped 225g mushroom, sliced 6 eggs 235ml unsweetened almond milk 1/8 tsp salt 1/4 teaspoon pepper. _ What you need to do : Pre heat oven to 230C combine the flour, butter and 1 egg and pre bake in a pie tin for 10mins (9" tin). This will make the crust. _ In the meantime cook up the bacon, transfer onto a chopping board and once cooked chop into pieces. Add the leeks and mushrooms and cook for 5 mins until softened. Beat the eggs and milk together then season with salt & pepper. Add in the bacon leaks and mushrooms. _ Reduce oven to 170C and pour egg mixture into the pre baked crust. Bake for 40-50 minutes until thoroughly cooked. _ This can be frozen for later use, Defrost and reheat in oven for 30 minutes. _ Nutrition per serving : 230kcal, 19g carbs, 8g protein, 14g fat.
