Ingredients
For the Spicy Jackfruit:
1 20 oz can
VEGAN SPICY JACKFRUIT TACOS ๐ŸŒฎ Ingredients For the Spicy Jackfruit: 1 20 oz can of young green Jackfruit in brine not ripe jackfruit in sugar syrup 1 small onion thinly sliced or chopped 1 or 2 chipotle peppers in adobo sauce 1 tbsp adobo sauce use less or more to heat preference 8 cloves of garlic 2 Tbsp ketchup 1/2 tsp ancho chili powder 1/4 tsp black pepper 1/2 tsp ground cumin 1 tsp ground coriander 1/2 tsp oregano 1 1/4 cup water divided salt to taste Drain the Jackfruit. Add to a saucepan with 3 cups of water, bring to a boil over medium heat and boil for 10 to 11 minutes. Drain, shred with a fork and keep aside. *You can skip this step and simmer the jackfruit in the sauce longer, Shred the jackfruit pieces midway during simmering when softened at Step 6. Heat oil in a skillet over medium heat. Add onions and a pinch of salt and cook until translucent. Stir occasionally. About 4 minutes. Blend chipotle peppers, adobo sauce, garlic cloves, ketchup, ancho chili, black pepper, cumin, coriander, oregano, a with 1/4 cup of water until smooth. Add the blended sauce to the onions and cook until the sauce thickens and smells roasted. Stir occasionally. About 6 to 8 minutes. Add the shredded jackfruit, 1 cup water and salt. Mix well. cover and cook for 10 minutes. Stir, reduce heat to medium,low and continue to cook until the sauce reduces and the jackfruit picks up the sauce flavor. 15 minutes or more. Taste and adjust salt, heat and sweet. Prep the toppings. Heat tortillas on a skillet or grill, add jackfruit. add lettuce or sprouts or greens of choice. Add avocado or guacamole, salsa or vegan sour cream and serve! WE HOPE YOU LOVE IT! VEGAN GLUTEN FREE CHICKPEA TACOS ๐ŸŒฎ 2-15.5 oz can organic chickpeas, rinsed and drained 2 tsp extra virgin olive oil 1/2 tsp smoked paprika 1/2 tsp cumin 1/2 tsp salt or to taste 1 cup fresh chopped cilantro ( set aside 2 tsp for the yogurt sauce) 24 grape tomatoes sliced in half 1 cup shredded purple cabbage 2 avocado, diced ( squeeze some lemon or lime on it to keep it from turning brown) 1 1/4 cups corn kernels ( you can use fresh or frozen) 6 corn tortillas Sriracha sauce to taste (optional) Heat olive oil in a large non-stick skillet. Add chickpeas, smoked and sweet paprika, cumin and salt. Cook over medium heat for 2 minutes, stirring often so the chickpeas are well coated with the spices. Add cilantro, toss well and continue cooking for another 3 minutes. Set aside To prepare the sauce, whisk all the ingredients together until well combined. Refrigerate until ready to use To assemble the tacos, fill each tortilla with chickpeas and the rest of the ingredients. FOR THE CAULIFLOWER
1/2 head cauliflower
VEGAN CAULIFLOWER ๐ŸŒฎ TACOS! ingredients FOR THE CAULIFLOWER 1/2 head cauliflower cut in bite sized pieces 4 tsp. olive oil 1 tsp. garlic powder 1 tsp. chili powder 3/4 cup buffalo sauce separated pepper to taste FOR THE TACOS 8 taco-sized flour tortillas 1 head romaine lettuce chopped 1 avocado pitted and diced vegan ranch to taste cilantro or green onion diced Instructions Preheat oven to 425 degrees and line a baking sheet with foil. In a large bowl combine cauliflower, olive oil, garlic powder, chili powder, pepper and 1/4 cup of buffalo sauce. Stir to combine. Spread evenly on baking sheet and cook for 20 minutes, flipping halfway.* Five minutes before the cauliflower is done cooking, heat up the remaining buffalo sauce in a saucepan or in the microwave. Remove cauliflower from the oven and place it back in the bowl. Add remaining heated buffalo sauce and stir to combine. To assemble tacos, load each tortilla with romaine, avocado and cauliflower.
